We rent campervans to escape city life. We use our precious vacation time to travel slowly and explore the great outdoors. Emily cooks and Jo drives. This is a recipe blog where we will share recipes that fuel our outdoor adventures, and can be made with minimal faff* in a typical campervan rental.
Having spent many years living in small apartments in London, New York and Chicago I’m no stranger to cooking in tiny kitchens. Cooking in a campervan takes tiny kitchen cooking to the next level.
If you’re renting your ride, you never quite know what you’re going to get in terms of prep space, food storage or kitchen equipment. Having a plan for what you’re going to eat is a good idea. I often have a planned menu for the trip, and have tested most of the recipes at home before taking them on the road.
I’m a self taught home cook and can’t wait to share with you what’s worked (and what hasn’t) so you too can enjoy the simplicity of life on the road. I hope these recipes inspire you to get creative with simple ingredients, and view cooking not as a chore but part of the experience. Happy Travels!
